how to make a home made smoker
i am gona make one and put pics up as i go
so if you have any help please feel free.
here's a start from nigel and his smoker that inspired me to make one
here are two photos one showing a steady stream of smoke coming from the stack the other showing the fish dab whiting cod and one butterfly mackeral fillet all of which were devoured in minuets.

for those who want to use a barrel like mine heres what i did first buy a clip top barrel £10ish then remove the liner if your lucky this can be burnt out by loads of wood if not like me pay £20ish to have it blasted,then 2" from the bottom drill a hole to fit a 22mm valve £7ish,opposit the valve drill a bunch of holes in a tight group and cover with a fridge magnet(cheaper than another valve)if you need more air intake when you smoke remove the magnet,then 11" from the top drill four holes to fit some stainless steel coach bolts £12ish to sit the rack on,my rack was from an old barbeque,below the rack level drill a hole for your temp gauge this will give you the temp at the food level then in the big hole in the lid fit a chimney i used a flask that i lost the lid to screws straight in the hole but you can fit 2"steel pipe fittings from a plumbers,thats the smoker made then you need a fire grill,the best way to do this is to buy some stainless steel expanded mesh and make a grill 9"wide 11"high but this is to dear for one person to buy so if anyone wants to share the price im willing but for now i use two quality street tins pot riveted together with loads of drill holes for air and four bolts in the bottom for legs your smoker is now ready to season to do this rub the inside all over with veg oil and light some charcoal and heat the inside of the drum this basically rustproofs the inside safely dont waste this heat chuck some ribs in i did see pics

and here she is smoking away this is just a baby one the big boy should be here on wednesday thanks to nigel
after a few phone calls to nigel for help to make sure am doing it right a cod fillet went on its the best peace of fish i have ever had the taste is not like any smoked fish that i have bought. thanks nigel for all your help
